- 1/2 large onion, chopped
- 1 cup sliced mushrooms
- 1 TBS olive or canola oil
- 1 cup brown rice
- 2 cups chicken broth
- Brown chopped onion and sliced mushrooms in a large saucepan
with one TBS olive oil, about 5 minutes.
- Add one cup brown rice and stir to coat grains in oil.
